My ‘Souper’ recipe

My Tasty Tomato and Red Pepper Soup

Had lots of people asking how I make soup. I don’t use a recipe per se, but have written down as close to what I do so people can try and replicate. You can vary the vegetables to whatever you have to hand.

1 large onion

3 sticks of celery

4 carrots

8 tomatoes

1 red pepper

Knorr Vegetable Bouillon (no added salt)

1.5 jugs of boiling water


  1. Add diced onion, carrot and celery to pan and gently sauté to soften
  2. Boil kettle and make up full jug of bouillon stock
  3. Start adding stock to veg until its all simmering
  4. Continue adding stock until 1 jug has been used.
  5. Add chopped tomato an red pepper
  6. Make up half jug of stock and continue adding this
  7. Once veg is soft and tomato’s are mushy remove from heat
  8. Blitz in blender – (poss in 2 halves)

Serve, I like the soup as it is, but you can add chilli flakes if needed, or perhaps some chorizo in with the tomato’s to add a fiery kick. To make soup more substantial, I pour over cooked pasta for my toddler as a sauce and serve with garlic bread.
